Black Bean Brownies
With the never-ending rainy weather continuing into my day off, the perfect afternoon activity was baking. While the house still smells of chocolate I figured this would be the time to sit and share this easy recipe.
Ingredients:
1/3 cup quick oatmeal
1 15 oz. can black beans, rinsed well and drained (low sodium is best)
½ cup honey
1-2 Tbsp sugar of choice
3 Tbsp unsweetened cocoa powder
2 tsp vanilla
¼ cup oil of choice
½ tsp baking powder
½ tsp baking soda
¼ tsp salt
1-2 eggs (Use 2 for brownies more fudge-like, chia or flax egg can be used as a substitute)
Instructions:
Put oatmeal in food processor/blender (food processor works best). Blend until consistency like lumpy flour.
Add all other ingredients except eggs. Blend well, will still be a little lumpy.
Add eggs and blend until combined, don’t over mix.
Pour into greased 8x8 pan
(sprinkle nuts or chocolate chips on top if desired)
Bake at 350 for 18-22 minutes, until toothpick comes out clean. Let cool for at least 20 minutes before cutting, enjoy!
I will be bringing these tasty morsels to work for about 60 people to try out for a mystery taste test. They will not know that there are beans in this batch of brownies prior to tasting. I will update this post with feedback provided and suggest any recipe tweaks.
