Famous Pumpkin Cookies
I used to be the biggest pumpkin fan due to my mom's amazing pumpkin cookies. Over the years that has somewhat changed with society calling for pumpkin everything the second one leaf changes color. If you've been in my life for any given time around the fall and winter it is likely that you have consumed my mom's famous pumpkin cookies. Today I'm here to attempt making them myself to see if I can take the baton.
Ingredients:
1 cup sugar
1 cup butter, softened
1 cup pumpkin
2 tsp vanilla
2 eggs
2 cups flour
1 tsp baking powder
3 tsp pumpkin pie spice
½ tsp salt
1+ cup mini chocolate chips (more or less to suit your taste)
Chopped nuts, if desired
Directions:
Heat oven to 350 degrees. In large bowl, combine first 5 ingredients, blend well.
Stir in flour, baking powder, spice, and salt. Blend well. Stir in chocolate
chips, and nuts if used. Drop by rounded teaspoonfuls, 2 inches apart onto cookie
sheet lined with parchment paper, Bake for 11-14 minutes. Immediately
remove from cookie sheet. Makes approximately 48 cookies.
Enjoy them while they're still warm for pure bliss. These cookes also freeze very well; perfect for making ahead or to thaw and enjoy one (or five) with some wine on a rough day.
While I may not be rushing out to purchase pumpkin spice toothpaste, these cookies do the trick for my holiday pumpkin fix with every single bite.
